The good thing about a voltmeter is you can put it anywhere on the ignition or accessory circuit. An amp meter needs the whole current going through it, or a shunt that carries the whole current. An amp meter is not needed or as useful since alternators replaced generators.

Yes, you can hook just the battery wire to a one wire alternator and they work. Some of them seem to leak more, so drain the battery after a couple weeks, and some need to be revved up to start charging.
