I think you'll be fine. I have been using 15-40 in my 6cyl R52 Gleaner for years and in my previous R50. Though that said, the "go to" guys at West Michigan Diesel recommend straight 40. Does Rotella make a difference? I wouldn't think so.

Can't speak to how it works for Deutz hydraulics/rear end. Always thought you needed some type of non-detergent oil in hydraulics to minimize foaming, but maybe Deutz is different.
