Could be a combination of many things but I think environment plays a big role. We have a cow bought from a sale barn, she tried to kill me loading on the trailer when we bought her. Fast forward two years I can scratch her on the head. We also have another one we bought from a local farm and she was flighty as can be. She calmed down after a few months as well.
