Here I prefer a mix of oats, 4010 peas, and hybrid brassica for fall grazing if planted in late July through late August intending to plant corn in the next year. Can skip the peas if you aren't after N production.
Seeded in July I start with sorghum sudangrass and add other species for various soil health purposes. I'd add sunn hemp to fix N and possibly buckwheat but be aware that buckwheat will volunteer if allowed to set seed.
