One wire low enough they can't get their head cleanly under it. Second wire close enough to the first wire they can't get their head cleanly through between but high enough they can't easily clear it. I don't think coons really think about jumping over but if you're concerned it may well be worth a third wire equally spaced. I'd add, make sure you've got a "hot" fencer, I think it should throw at least a 1/16th to 1/8th inch spark.
