It seems that I talk to people in both camps. One side likes to cut the wheat high, drill the beans, then mow the stubble to trap in the moisture. The other side wants to get the straw baled and have less residue out there because they think it plants better that way.

I would assume you're dealing with a straw buyer that is making large squares and can handle baling a large windrow from a 40' head so that would not be a concern for me.

I think if I was in your shoes I would have the straw baled, double crop the beans, and then try and get poultry litter on later in the fall. You should be coming out money ahead on the proceeds from the straw vs. the cost to replace those nutrients.
