In the spring.
Option 1. Clear seed the alfalfa and harvest along with any weeds. Market or use according to quality. Subsequent cuttings should be clean.
Option 2. I have seeded alfalfa with succotash ( 1/3 each oats wheat barley) Harvest the first cutting when the succotash is headed and perhaps in the milk/dough stage as wet wrapped bales or silage.
