Your conditions and varieties are different than ours. We usually drill at an inch on dry land and irrigated. Deeper than that can be too deep. I understand that for sure.
I could see 3/4". Half inch seems shallow. But as long as you can keep the top inch or so of soil moist you can probably be ok. I'd be a little concerned about drying out the top of the soil in cold weather and the wheat winter killing but maybe that doesn't happen with you?
Back east where there is more rainfall wheat is broadcast and harrowed in. Wouldn't work very well here. In fact broadcast seeded wheat is not even insurable here.
