Subject: Variable Frequency Drive??

I am going to have a water tank and pallet racking to hold chemicals shuttles in the corner of a new building and will be filling sprayer there from the one location all the time so instead of a gas motor pump I was thinking about buying an electric motor driven pump, I have 3 phase available there if I run a wire, dultimer book says it is a 7.5 hp, my question is can you easily adjust the speed (kind of like a dial) so I can slow it up while putting chemicals, or are they harder than that to adjust the speed, also since I would have a frequency drive could I just use the single phase power that will be there anyways.
