Subject: RE: Butchering a cow

Faunsdale, AL
Helped butcher a 2 year old Angus bull that went through the floor of a trailer. When I got there, He was standing on his hooves on all 4 feet, but there was too much damage to the skin and tendons for him to make it. Never even set foot on the farm! Owner waited about an hour and a half before he would pull the trigger on him. Immediately hung and bled him properly, gutted him by flashlight and left him hanging overnight before skinning and delivering the carcass to a local deer processor to be cut.

I got 20 pounds of ground beef for my help, but it's not really good. Can make chili or some such out of it, but not burgers.
