Not sure this will help, something affecting the brain? Several years ago had a 3-4 week old lamb jump in a stocktank, we found it alive 2-3 hours later but it was swimming, cold, and had taken on water. Warmed it up good and put it in a jug with its momma. It had several of the symptoms you describe. Looked normal, would get in odd positions and couldn't get up, grinding teeth, and it would just ball for its momma with her balling and trying to care for it, but never would nurse. It would chew on a bottle but it was like we had to teach it to nurse every day. Vet said probably something in that ordeal had caused limited oxygen to the brain and thus some kind of brain damage. Maybe too cold for too long, water in the lungs, or we wondered if it was a stress issue (PTSD of sorts). We were able to keep it alive by drenching and working with the bottle. Had another lamb last year with similar symptoms but we don't know what caused it. Son and I just commented that it was similar to the "stocktank lamb".
