If going under ground I would use CTS HDPE 1" pipe. CTS stands for copper tube size. For residential and water lines to troughs we've been using this. Use brass compression fittings. I wouldn't use PEX underground with crimp fittings, would be ok if run in conduit and no fittings under ground. CTS has pretty much taken over all the residential water lines in city's, etc. here. The potable water pipe has a lining in it so it meets regs. for housing.
