We've fed a limited number of green yearlings (all I have for a comparison) and they were leaner when we shipped them but about the same finish weight. I think they could've taken more days and been alright so they could've weighed more. It depends too if you're getting a premium on yield grade and what the select spread is too.

My problem with trying to grow them slower is that silage is the cheapest and most available roughage I have. Hay doesn't work well in our mixer and I use all my straw as bedding and then some so it's hard to water it down much.

Another reason to not hold them back is that we do a good deal of custom feeding so every extra day they're in a pen is an opportunity cost of $0.40 yardage plus about $0.10 of feed markup so I have a hard time justifying extra days - same for our customers.
