Had a remarkably similar experience as a kid. And we both realize that the mechanics and safety mechanisms on modern gas ranges are miles and miles better/safer than what was available when either of us were kids.

I'm sure they are. My wife's rental house has a modern gas stove, I cooked breakfast on it quite a few times & got along fine with it.
