One way I used to cook fish like that was in aluminum foil. Use some Italian salad dressing and remember fish cooks fast.
My favorite was to use corn meal for breading and pan fry serving size fillet pieces..
There is a dark line of flesh along the skin side, remove that after cooking, it wont hurt you but it has an off taste.
