NEIA | Brine with Morton Tenderquick ,salt,peppercorns, and whatever else you like for seasonings for a few days. I usually just use a jumbo ziplock bag in a tub or bowl in case it leaks. That will give it the reddish pink color. I then smoke/grill with inderect heat for about 3-4 hours at 250-275°. Put it in a aluminum steamer pan covered for 8-10 hours more at same heat . Keep it moist with beef broth. Delicious! I like to slice it thin, put on rye bread with swiss and mayo, and put it in the panini maker. Kids love it! | |
