First they want all the good cuts. Check if you need another type of license to sell to resteraunts . I had a unique situation in which a high end type resteraunt bought the whole cow. I delivered it in primal cuts. He had no problem with all the hamburger. But all things came to a end when the chef quit and moved away. Next chef just wanted the T bones and all the prime cuts. Also wanted me to beat the prices Sysco was giving him.
