With the proposed layout, you could add a small lean-to off the shop to cover the heifer and sorting pens if desirable. I'd be leery of having cattle rubbing and tearing up the tin on my shop though- do you plan to have a rail along the side?

Now be honest with yourself... do you really plan on removing all that fencing and gates to park something under a roof in the summer? I sure wouldn't- too much hassle. It is nice having covered facilities but you could do the same thing with a pole barn without sides, just a roof and a dirt or rock floor. Maybe have some smaller scale windbreaks around the chute if needed. Personally, I would keep this a livestock building, maybe fill the front half of the shed with hay and build your house/shop somewhere else close.
