One of the best meals I've ever had at a restaurant was at the Public House in the Venetian in Las Vegas. Beef braised short rib with the gravy being greatly reduced and put on mashed potatoes.
Tried a recipe in the crock pot and got to many seasonings in it. Really disappointed in that.
I would sear the outside and braise in a beef stock of some sort
