When I can I hang mine for 3-4 days, quarter it salt and ice water bath for 2-3 days (change water 2 times day until clear) loins stay whole, couple roasts out of rear quarters rest ground for burger (+10% beef fat), brats, snack sticks
hanging then soaking the blood out takes any game taste out of the meat.
