Subject: Anyone making homemade soup today?

I always buy a bigger turkey then we need. I keep enough of the meat for a few meals of leftovers. Even vacuum sealed one for when we are on the road to AZ in Dec. I hear so many people say they just throw the carcass away. What a waste. I of course leave lots of meat on mine too. I simmered it for about 6 hours yesterday, then took the carcass out and put the bones and meat in one bowl and the broth back in the large stock pot. Set it out in my screened in porch to cool it down overnight. It got down to 33. This morning the fat had come to the top and hardened so I could take that off. Now I just added the veggies. Will add the meat later and even made homemade noodles for it. Will be able to freeze some for eating either on the road, or in AZ. Just yummy.
