A loin does not have a lot of fat or collagen like a shoulder so it can dry out. Smoke or grill it for a while to get the out side browned and favored and then seal it up in a roaster covered with foil and bake at 275 until it falling apart tender is the way I like them. I am not keen on pink meat.
