A good sharp chef or santoko knife and a good solid cutting board works best for me. A food processor works too if you are not to fussy about how they are chopped. Most gadgets take more time to set up and then clean up then it does to just chop them up with a knife. Every cook should learn how to correctly use a chef's knife because you need to use it all the time.
