Never ever, ever cook two different meats at the same time. 6 hours on brisket open and 6+ closed. Never use a trimmed brisket. If you buy a brisket, curl it up and make the ends touch fat up. The closer it touches, the less fat. Smoke ring should be no more than a 1/4 inch in. Always cook fat up.
