Our sealer has a button that you can press to stop the vacuum and seal the bag before the liquid gets up to the sealer bar. We do this with things that are moist. Just did some pork chops with sauce the other night. Ours is a FoodSaver.
Edit: Another thought. Could you use a salad spinner to help get rid of some more of the water?
