The rear hock acts as a shock and if it's to straight it locks more and causes joint damage. They can even break over the wrong way if the animal steps wrong or gets in a fight. Bulls put a lot of pressure on there rear legs, and if you walk through a bull stud, many of the club calf bulls are no longer sound on there back legs (they like them straight, don't know why).
