If specifically growing for human consumption, you want to reduce the cadmium. Omega was the first popular yellow flax and was unfortunately a high cadmium accumulating variety. I have not kept up on the later varieties so I can't tell you how they are. A lot would depend on your soils. Then there is also the practice of using zinc at the correct time to compete with the cadmium.
