Subject: A few questions, Arkansas crops?

I just got back from Arkansas, Tennessee, and Kentucky. And have some questions?

I saw fields that look like some kind of straw and had like some sort of drainage or terraces across the field. crop was cut about a foot tall. Was this Rice? and what is purpose of the drainage cuts or terraces?

Also a few fields I thought were corn but had excessive amount of volunteer corn growing about a foot tall. Was that corn or something like maise or sorgum/sudan? Also what I thought to be Soybean fields too with excessive volunteer soybeans?

Also a lot of Soybeans unharvested in western Kentucky an Tennessee? Didn't look too wet?
