Southwestern Minnesota | Here's my favorite Pecan Pie recipe:
9 inch unbaked pastry shell
4 eggs, beaten slightly
1 cup brown sugar
1 cup light corn syrup
1/2 cup butter, melted
1/4 tsp salt
1 tsp vanilla
1 cup pecan halves
Combine syrup, sugar, salt and butter. Mix well. Add the eggs and vanilla. Mix until blended. Pour into prepared pastry shell. Arrange the nuts over top of pie. Preheat oven to 425 degrees.
Bake 425 degrees for 10 minutes. Reduce heat to 350 degrees and finish baking ONLY until the center of filling is just set about 30 minutes more. Remove from oven as pie will continue to set until it starts cooling. Serve with whipped cream or topping.
(Tips- don't overbake and use as fresh of pecans as is possible.) | |
