You are going to end up with one of three things. Wrapped well, a roast you could have made in the oven, a really undercooked piece of meat or a burned up piece of beef. It won't cook like hog with a layer of skin and fat to insulate the meat. It's not something you would ever see in brisket country. Vacqueros never cooked flank steak that way either.
