...you would probably have to have them on a bed...because you have to dig at least 12 inches below the surface to get below the major mass of the beet. Even then..you're going to lose a certain percentage of "tails" on the beets. I'm not sure how you would handle the dirt also. Might be interesting if you could do it like the old Scott Viner harvestors pulling from the leaves....but I don't know many harvestors that could handle that much material being tossed about.
