Put a sprinkler on it if a curing compound hasn't been applied. Curing either way will yield a better surface than allowing it to dry rapidly. As Joe stated, the compressive strength will be about 70 to 75% in 1 week.

The point on large pours has been that even after nearly 80 years, the concrete in the Hoover Dam is still curing due to the presence of water that is reacting to the cement within the concrete mix. Once this process stops, it will never restart.

On several thick wall pours I have been involved with, poured 1 day, waited 3 days then stripped the forms. Any repairs (honeycombing) were repaired and curing compound applied that day. Flat work had the curing compound or sprinkler or poly sheeting applied several hours after the last finisher stepped of the work.
