It's pretty common to see that. Herbicides and high salt fertilizers are usually the culprit. It is the corn's way of dealing with contaminants. My guess since that is organic there is a history of heavy manure use that is causing it. The healthier the plant, the whiter it will be. Your pic isn't too bad. I have seen brown much higher up than that.
