I've heard researchers speculate that with all conditions being equal a wheat crop can only produce so much protein if it's high yielding more kernels to spread that protein out so lower levels and then the opposite with low yield.

Lots of bar/coffee shop stories of guys trying or talking about anhydrous or spraying liquid on when filling bin but just as many stories of grain getting rejected due to spell or condition that such treatments might cause.
