| Mango ice cream or sherbet should be easy peasy. For ice cream, if you don't have an ice-cream maker, just add more cream and egg yolks, and you'll need to stir the container only 2 or 3 times while it's freezing. And it would taste even better too. The less milk and the more cream and yolks there is, the less water and the smaller ice particles will be. I haven't looked up recipes for this fruit, but I assume you need to add a bit of lemon juice to the mango puree. | |
