| Hard as rock means you mixed it for too long and the shortening melted into the flour before baking, it's not cement! ;)
4 key factors for a great pie crust:
- Use ice cold water (add ice cubes to water 15 minutes before);
- Use very cold butter or shortening too, cut in small cubes;
- Add the cold water and don't mix in the dough for too long, there must still be big chunks of butter in it, they will melt away when baking and provide a flaky texture;
- Let the dough rest in the fridge for an hour or longer, so the starch and gluten can get moist and elastic. It means you can prepare the dough in advance and just focus on the pie filling.
I'd rather use plain lard or butter than shortening for a savory pie, though. Not much point baking if it's to use processed oil, especially if it's hydrogenated. | |
