I cooked a turkey breast for Christmas lunch today. It was one of the best I have ever done. I heated the oven to 450 and put breast side down on rack in open roaster. Baked for 1 hour at 450, then turned breast side up and brushed with butter reduced temp to 350 and baked until done...approximately 2 more hours. It was moist not dry and very tender.
