It's common and largely weather driven. The areas that basically die in the summer heat don't do it much, but throw a bunch of cool weather on a wheat harvest up north and it's common practice. If we ever got a typical harvest, probably the first fields would be sprayed but if it's harvest weather we often quit as we fall behind.

One thing, it's not a dessicant and the label is specifically designed so it's not. The wheat is at physiological maturity. Roundup Fast Forward when that was available, well there was a product that dried things out.

It's not just wheat that uses it. Very few acres of flax not sprayed. Was a big fight for a few years in the edible beans.

I use that largely because the religious zealots said it wasn't used on peas and lentils. Well amazingly enough they didn't know what they were talking about. The Canadian guide tells you when to use it on both of those.

They also understand nothing about the wheat. The whole wheat making a dying gasp and putting extra yield into the head is just a figment of imagination. Used on label there is nothing going into the head by then. What can very much be affected is field losses.
