It has to do with how fast and much an animal can move. Muscles that cant move fast but are not used have less myoglobin. Muscles in use all of the time have more myoglobin to carry more oxygen. More myoglobin more iron. Iron has a distinct taste. That is how my meats instructor in college explained it.
