I'm wondering where goats ended up in your pie chart? Ovine refers to "sheeplike" and bovine is generally a cattle term and doesn't include the goat family, so that leaves other as the only place goats could fit, but 2%? No stats to back this up, but have always heard that goat meat is consumed by more people on a worldwide basis daily than any other meat. In many parts of the world beef is expensive and rare and pork is objectionable due to religious belief. That leaves goat or chicken as the other two possibilities. Your point is valid tho'; no question that upward economic mobility means more meat in the diet and that almost certainly means more grain consumption.
