Depends upon what type of cooker you are using. We use to use a charcoal cooker that had rotating baskets & a fan the blew air up thru the charcoal, coals were on a pull out tray so you didn't have to open the cooker. . We could do a 200# hog in 6-8 hrs but it would keep the temp at 400
