There are about 500 species of crayfish on this planet. Most of them are not suitable for human consumption. The large crayfish that grow in the swamps and the farm raised crayfish common to the southeastern US are fairly large and very tasty. I would suggest going to the LSU Ag Center web site and then contacting the county agents in Evangeline, St Landry, Acadia, St Martin or Vermillion Parish for a list of firms who ship out of state. If you want crayfish in 2014, I would suggest purchasing the crayfish in the next few weeks. The shells get very hard and they are tough to peel after Mid-May. Also, the live crayfish will be shipped in cold insulated containers. The crayfish should be washed at least once and the dead ones removed prior to boiling. After boiling any crayfish with a straight tail should be discarded. The crayfish with straight tails were dead prior to boiling. Please keep in mind that you will get about 7 pounds of tail meat from a 50 pound bag of crayfish. When you consider the cost of the crayfish and air freight to your area, the cost per pound of meat will be a little steep. It could be that other food choices will cost less and be equally enjoyable.
