Franklinton, LA | We normally boil 5 pounds of live crayfish per person. This is about 11.2 ounces of tail meat per person based on a 14% turnout. We normally turn off the fire and let the crayfish set for about 15 minutes to soak up some seasoning. If you put shrimp in the pot with the crayfish you will have a swiveled up overcooked mess!
