Is it possible that when we drilled the hole out with the Craft Air jig that the hole is not quite squared up? Just the slightest misalignment at the pivot point could cause the boot to touch the blade at an angle and not flat.

That sounds like you are rolling the opener under -- i.e., the frame is lifting, which is caused by inadequate frame weight for the hydraulic down-pressure you are running (not all the gauges are the same, btw).  If the frame lifts, the openers have 'rolled under' and are now riding more on their heel -- this results in shallower depth and more wear on the rear part of the boot, rather than the front corner.
