General rule of thumb I would follow is you want to be able to comfortably rest your plams on the table surface. Along the walls I put my benches a little higher because I usually stand and work on smaller things. When I build myself a big weld table, I will make it slightly shorter. If your doing heavy work and items make it short, lighter stuff, up higher.

Best thing to do is go into you kitchen and try out the table and the countertops and make your adjustments from there.
