PIK (payment in kind) by selling grain or livestock in an employees name is always an option if you really dont want to pay FICA. Just make sure the employee knows they are not building anything towards social security that they can draw later. Might be something that works better for a part timer with another job where they pay withholdings. They may even want to have grain delivered to the elevator on a DP contract, and they can play the market a little bit themselves. Saves a trip to the casino, right?
