Brother in law has a time share there and can't use it this year.  Wife wants to go and it will work for both of us to go at the end of January.  She wants to go to the spa for a day and its NOT for this guy.  We have a car rented when we get there, what can a farmer do to waste a day looking at ag related things around the island?  TIA for any ideas!

There are lots of fields of corn and likely some cane growing yet . . . .
If you are headed from the airport to the west side of the island, you'll be going by the fields. There is a cane muesum by the cane processing plant. Drive around the plant, they have lots of machinery there - if it's still running (was back in 2010)
There area horticultural gardens on the south slope of the west part of the island . . . .
Ideally - it maybe a good day for you to head out to the ocean and do some fishing on a charter. There are lots to choose from.
There is lots to see, just driving around. My wife kind'da likes to drive and look like I do - but she doesn't like it when I stop to "investagate" . . ..
There are lott'sa beaches to find / explore - but that would be an adventure you and the wife should do.
You can pretty easily drive around for the day, just sight seeing the different parts of the island.

Edit: Here is a guide of things to do and eat while on Maui - http://www.mauihawaii.org/
