Don't know anything about the accounting software, but I'm guessing Windows 7 would be your choice for that. The Verizon Jetpack will work with the built-in WIFI on about any laptop these days. Those things suck down power, but can be run via USB from the laptop. Maybe an extended battery would be in order if you don't have power there?

I've had pretty good luck with Dell Lattitudes. I'm on a 6 year old one right now, and have a new one for work. My only complaint about my work one is the smaller screen. They do have a version that has a much larger screen and a number pad. I'm considering one of those as a replacement for my home system.

Does she need VPN to do work? That might make a difference in which version of Windows 7 you get. Get at least 4GB of RAM, 8GB isn't out of the question. Note that only 64-bit versions of Windows 7 can support more than 4GB of RAM.
