It should vernalize fine.
The big things you give up are root development and winter hardiness.
So if it kills out, well, there you are. Dead winter wheat isn't the worst thing, half dead is.
As far as root development, if you go through a normal more rain than wheat wants anyway summer, that's not a big deal for you. If you run a real drought, you will see an effect.
The other thing that may or may not be a factor for you is that real late planting tends to make the wheat mature late. If you are counting on double cropping to make wheat work and if you are on the short side of enough season for the second crop, that could be a consideration.
