For your varieties you will have to select the variety that is in each field. The only way you could make it so you didn't have to select the variety in each field is to set a variety locator file up in APEX or another mapping software. It is really simple to do if you have the software and you have you used the documentation while planting. Once you have the variety locator file set up you can then just check a box and it would automatically switch the varieties for you.

For your yield calibration you will do it in the Command Center as KevinM said. It is on the diagnostics screen, 2 pages in. You will see a drop down box for calibrations and you will drop down the box and it will be all the way at the bottom.
